2004 Cabernet Sauvignon

Quite aromatic, this Cab shows the 21 months it spent in fine, small French oak barrels. Our blend for this vintage is 100% Cabernet Sauvignon from our front vineyard. It benefits from so-called "long hang time" as Mother Nature made us wait patiently until Oct. 12th to pick it at the desired sugar level (many Cabernets were picked 3 to 4 weeks earlier). Elegant and balanced. Uncork now or hold for five years.

Winemaker's notes

Harvested on Oct 12 these grapes had perfect balance between sugar and acidity as well as great color. Crushed, cold soaked and fermented in open top fermenters, the wine was pressed, settled and aged in oak cooperage, 56% French oak. After 21 months of ageing, the wines were fined, gently filtered and bottled. We recommend ageing this wine, if you can wait. Drink 2008-2012.

Steak and beef stew match well, as does

mushroom-barley soup.

Matches with cheese

Serve with light blue cheese such as Roquefort, or sharp aged cheddar
